I am fond of fine cuisine, curious of products, traditional recipes as well as a modern way of thinking about the cuisine.
In this blog I try to make great chefs recipes accessible to everybody in a normal though well equipped home kitchen. Technical steps are as detailed as possible since I understand how frustrating is to have to guess the exact procedure or relying on expensive machinery to make a recipe.
I am a gourmet, for me the taste is the first and most important feature, well above sleek appearance or special effects. Still I try to keep my cuisine as light, easy to digest, healthy as possible. Simplicity and a good technique often produces a rewarding and good looking result.
I shall do my best to give credit to other chefs or food-lover for recipes and advice. The recipes on the header are from Troigros, in my opinion one of the best chef on the planet.
